Description

Bright, fruity nectarines shine in this simple, pectin-free jam made with just three ingredients.


Ingredients

  • 2 lbs ripe nectarines, chopped
  • 1 cup granulated sugar
  • 2 tbsp fresh lemon juice

Instructions

  1. Combine nectarines, sugar, and lemon juice in a wide saucepan.
  2. Cook over medium heat, stirring often, until thickened (25–30 min).
  3. Test for doneness using the spoon test or a thermometer (220°F).
  4. Transfer to jars, cool, and refrigerate or process for shelf-stable storage.

Notes

This recipe yields about 2 cups. Use fully ripe nectarines for best flavor.
