Ingredients
- 1 lb ground turkey
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 2 garlic cloves, minced
- 1 large bell pepper, sliced
- 1 medium zucchini, chopped
- 2 tbsp tomato paste
- 1/4 cup broth or water
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Add diced onion and cook until soft.
- Add garlic and cook for 1 minute until fragrant.
- Add ground turkey, breaking it up as it cooks. Brown fully.
- Stir in bell pepper, zucchini, tomato paste, and cumin. Mix well.
- Pour in broth or water and let simmer for 5 minutes.
- Season with salt and pepper. Serve hot with rice or tortillas.
