Ingredients
1 lb lean ground turkey
1 tbsp olive oil or avocado oil
1 tbsp taco seasoning (or homemade mix)
1/4 cup water
2 cups cooked rice or cauliflower rice
1 cup canned black beans (drained and rinsed)
1 red bell pepper, diced
1/2 cup corn (fresh, frozen, or canned)
1 cup chopped tomatoes
1/4 cup chopped cilantro
1 lime, cut into wedges
Salt and pepper to taste
Optional toppings: Greek yogurt, avocado, shredded cheese, hot sauce
Instructions
1. Heat oil in a large skillet over medium heat. Add ground turkey and cook until browned, breaking it apart as it cooks.
2. Stir in taco seasoning and water. Simmer for 3–4 minutes until well combined and slightly thickened.
3. While the turkey cooks, warm the rice and beans. Chop all vegetables and prepare toppings.
4. Assemble bowls: add rice as base, then layer turkey, beans, vegetables, and cilantro.
5. Top with lime juice and any optional toppings before serving.
6. Serve warm or store in containers for meal prep (up to 4 days).
Notes
