Description
This Alfredo Lasagna Soup is creamy, comforting, and full of Italian-inspired flavors. With shredded chicken, tender noodles, and a cheesy Parmesan finish, it’s a one-pot wonder you’ll crave all year long.
Ingredients
1 tbsp olive oil or butter
1 small onion, diced
2 cloves garlic, minced
2 tbsp all-purpose flour
1 cup heavy cream
6 cups chicken broth
½ pound broken lasagna noodles
2 cups shredded chicken
1 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
1. Heat oil in a large pot over medium heat. Sauté onions until soft.
2. Add garlic; cook 30 seconds more.
3. Stir in flour and whisk to form a light roux.
4. Slowly whisk in cream, then chicken broth. Bring to a simmer.
5. Add broken lasagna noodles; simmer 8–12 minutes until tender.
6. Add shredded chicken and Parmesan. Stir until smooth and creamy.
7. Season with salt and pepper to taste. Serve warm with extra cheese or herbs.
Notes
For a shortcut, use jarred Alfredo sauce in place of the roux and cream.
Add baby spinach or peas during the last 5 minutes for extra veggies.
Freeze the soup base (without noodles or cheese) for best texture when reheating.
