These almond croissant cookies bring the rich, nutty flavor of classic almond croissants into a delightful cookie form. Made with buttery dough and a sweet almond filling, they’re perfect for tea time or dessert.
Ingredients
Dry Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1 teaspoon almond extract
Wet Ingredients:
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1–2 tablespoons milk or cream (as needed)
Almond Filling:
- 1/2 cup almond paste or frangipane
- 1/4 cup confectioners’ sugar
- Optional: 1/4 cup sliced almonds
Instructions

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together flour, baking powder, salt, and sugar.

In a separate bowl, cream the butter until smooth. Add eggs and almond extract, mixing until combined.

Gradually mix dry ingredients into wet ingredients to form a dough. Add milk or cream as needed for consistency.

In a small bowl, mix almond paste and confectioners’ sugar to form the filling.

Scoop dough and flatten slightly. Place a small amount of almond filling in the center, then shape into a crescent or seal as desired.

Place cookies on the baking sheet. Optionally, top with sliced almonds.

Bake for 12–15 minutes or until golden around the edges.

Cool completely before serving. Dust with extra confectioners’ sugar if desired.
