Description

These almond croissant cookies bring the rich, nutty flavor of classic almond croissants into a delightful cookie form. Made with buttery dough and a sweet almond filling, they’re perfect for tea time or dessert.


Ingredients

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 teaspoon almond extract

Wet Ingredients:

  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1–2 tablespoons milk or cream (as needed)

Almond Filling:

  • 1/2 cup almond paste or frangipane
  • 1/4 cup confectioners’ sugar
  • Optional: 1/4 cup sliced almonds

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  • In a medium bowl, whisk together flour, baking powder, salt, and sugar.

  • In a separate bowl, cream the butter until smooth. Add eggs and almond extract, mixing until combined.

  • Gradually mix dry ingredients into wet ingredients to form a dough. Add milk or cream as needed for consistency.

  • In a small bowl, mix almond paste and confectioners’ sugar to form the filling.

  • Scoop dough and flatten slightly. Place a small amount of almond filling in the center, then shape into a crescent or seal as desired.

  • Place cookies on the baking sheet. Optionally, top with sliced almonds.

  • Bake for 12–15 minutes or until golden around the edges.

  • Cool completely before serving. Dust with extra confectioners’ sugar if desired.

Notes

  • You can chill the dough for 30 minutes for easier shaping.

  • Almond extract is strong—measure carefully for balanced flavor.

  • These freeze well and can be stored for up to a month.
