Description

This flavorful Beef Pepper Rice recipe blends tender stir-fried beef, vibrant peppers, and fragrant jasmine rice in a savory, soy-based sauce. It’s a quick and comforting meal perfect for busy weeknights or casual family dinners.

Ingredients

  • 1 lb (450g) sirloin or ribeye beef, thinly sliced
  • 2 tablespoons soy sauce (for marinade)
  • 1 teaspoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 2 cups cooked jasmine or basmati rice
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 2 scallions, chopped
  • Salt and black pepper, to taste
  • 1 tablespoon neutral oil (e.g., vegetable or canola)
  • 2 tablespoons water or broth (for reheating, optional)

Instructions

  1. Marinate the Beef: In a bowl, mix sliced beef with soy sauce, garlic, and ginger. Let it marinate for at least 30 minutes.

  2. Prepare the Vegetables: While the beef marinates, slice the bell peppers, onion, and scallions.

  3. Cook the Beef: In a hot pan with oil, cook the marinated beef until browned and fully cooked. Remove and set aside.

  4. Sauté the Vegetables: In the same pan, lightly stir-fry the peppers and onion until just tender.

  5. Add the Rice: Stir in the cooked rice and mix well with the vegetables.

  6. Season the Dish: Add oyster sauce (if using), sesame oil, salt, and black pepper. Return the beef to the pan and stir to combine.

  7. Finish and Serve: Add chopped scallions last and serve hot.

Notes

  • For best flavor, use fresh garlic and ginger rather than powdered.
  • Jasmine or basmati rice works well for its aroma and texture.
  • Use shallow containers and refrigerate leftovers within 2 hours.
  • Reheat with a splash of water or broth to keep rice from drying out.
