1 lb ground beef
1 tbsp olive oil
1 can (14 oz) diced tomatoes
1 can (15 oz) tomato sauce
1 can (14 oz) kidney beans, drained
1 can (14 oz) black beans, drained
2 tbsp chili powder
1 tsp ground cumin
1 tsp garlic powder
1/2 tsp smoked paprika
Salt and black pepper, to taste
1 tsp sugar (optional)
1–1.5 cups water or broth
— Optional Toppings —
Shredded cheddar cheese, sour cream, green onions, tortilla chips
Instructions
1. In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned.
2. Drain excess fat if needed. Stir in diced tomatoes, tomato sauce, and drained beans.
3. Add chili powder, cumin, garlic powder, smoked paprika, salt, pepper, and sugar.
4. Pour in water or broth. Stir well to combine and bring to a low boil.
5. Reduce heat, cover partially, and simmer for 30 minutes, stirring occasionally.
6. Taste and adjust seasonings. Serve hot with desired toppings.
Notes
For a vegetarian version, substitute ground beef with lentils or veggie crumbles.
Make it spicier with chipotle powder or chopped jalapeños.
Leftovers taste even better the next day and freeze beautifully.
