Description

All the flavor of a blueberry muffin in a healthy, no-bake protein ball. Sweet, satisfying, and ready in minutes—perfect for cold snack storage.


Ingredients

1 cup old-fashioned oats

½ cup almond butter

¼ cup vanilla protein powder

⅓ cup dried or freeze-dried blueberries

⅓ cup honey or maple syrup

Optional: 1 tsp lemon zest

Optional: 1 tbsp chia or flaxseed

Optional: dash of cinnamon


Instructions

1. In a mixing bowl, stir together oats, protein powder, and blueberries.

2. Add almond butter and honey. Mix until a sticky dough forms.

3. Add lemon zest, cinnamon, or chia seeds if using.

4. Roll mixture into 1-inch balls using a spoon or scoop.

5. Place balls on a tray or plate and refrigerate for 30 minutes.

6. Store in an airtight container in the fridge or freezer.

Notes

Use sunflower seed butter for a nut-free version.

Freeze for up to 2 months for longer storage.

Great as a healthy breakfast bite or post-workout snack.
