Ingredients
- 2 cups of brussel sprouts, trimmed and halved
- 2 boneless, skinless chicken breasts, diced
- 4 cups chicken broth
- 1 cup egg noodles
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Fresh parsley (optional, for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced chicken breasts and cook until browned, about 5-7 minutes.
- Add the chopped onion and minced garlic to the pot. Sauté for another 3-4 minutes until fragrant.
- Pour in the chicken broth and bring to a boil.
- Add the halved brussel sprouts, dried thyme, rosemary, salt, and pepper. Reduce heat and simmer for 15-20 minutes.
- Stir in the egg noodles and cook for another 8-10 minutes until noodles are tender.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley if desired.
Notes
- You can substitute chicken thighs for chicken breasts for more flavor.
- If you prefer a vegetarian version, replace the chicken with plant-based protein or beans.
