Ingredients
- 1 medium head of cabbage, chopped
- 1 cup of rice
- 1 medium onion, chopped

- 2 tablespoons olive oil
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup vegetable broth
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until soft.
- Add the chopped cabbage to the skillet, cooking for an additional 5 minutes until slightly softened.
- Stir in the rice, diced tomatoes, vegetable broth, paprika, thyme, salt, and pepper. Bring to a simmer and cook for 5-7 minutes.
- Transfer the mixture into a baking dish and top with shredded cheese (optional).
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for another 10-15 minutes until the top is golden and bubbly.
