Ingredients

  • 2 chicken breasts (or thighs), cooked and shredded
  • 8 oz spaghetti noodles
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth (or water)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (optional)
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional, for extra flavor)
  • 1 tablespoon olive oil (for cooking chicken and veggies)
  • ½ cup sour cream (optional, for extra creaminess)
  • Fresh parsley (for garnish, optional)

Instructions

  • Cook the Spaghetti: Boil water, cook the spaghetti noodles as per the package instructions, drain, and set aside.
  • Prepare the Chicken: Cook chicken breasts in olive oil, season with salt, pepper, and paprika. Once done, shred the chicken.
  • Sauté Vegetables: Sauté onions, garlic, and bell peppers (if using) in the same skillet until softened.
  • Make the Cheesy Sauce: Add cream of chicken soup, chicken broth, and sour cream (optional). Stir until smooth, and simmer for 3-4 minutes.
  • Combine Chicken, Pasta, and Sauce: Add shredded chicken and pasta to the skillet, mixing well.
  • Add the Cheese: Stir in cheddar and mozzarella cheeses until melted and creamy.
  • Bake (Optional): Transfer to a greased baking dish, top with more cheese, and bake at 375°F for 15-20 minutes.
