Ingredients

  • 4 medium zucchini
  • 1 pound ground turkey
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Slice zucchinis in half lengthwise and scoop out centers. Sprinkle with salt and let sit 10 minutes.
  2. In a skillet, heat olive oil and cook onions and garlic until fragrant. Add ground turkey and cook through.
  3. Stir in tomato paste, zucchini pulp, and Italian seasoning. Simmer for 5 minutes. Season with salt and pepper.
  4. Pat zucchini dry, pre-bake for 10 minutes, then fill each with turkey mixture. Top with shredded cheese.
  5. Bake for 15–20 minutes, then broil for 2–3 minutes until cheese is golden. Garnish with parsley and serve hot.

Notes

For extra flavor, mix a tablespoon of cream cheese into the filling before stuffing the boats.
