A healthy and satisfying dinner recipe featuring tender zucchini boats filled with seasoned ground turkey and topped with bubbly, melted cheese.
Ingredients
- 4 medium zucchini
- 1 pound ground turkey
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C). Slice zucchinis in half lengthwise and scoop out centers. Sprinkle with salt and let sit 10 minutes.
- In a skillet, heat olive oil and cook onions and garlic until fragrant. Add ground turkey and cook through.
- Stir in tomato paste, zucchini pulp, and Italian seasoning. Simmer for 5 minutes. Season with salt and pepper.
- Pat zucchini dry, pre-bake for 10 minutes, then fill each with turkey mixture. Top with shredded cheese.
- Bake for 15–20 minutes, then broil for 2–3 minutes until cheese is golden. Garnish with parsley and serve hot.
Notes
For extra flavor, mix a tablespoon of cream cheese into the filling before stuffing the boats.
