Ingredients

2 tbsp olive oil

1 medium onion, diced

4 cloves garlic, minced

1 lb ground beef or Italian sausage

1 can (28 oz) crushed tomatoes

2 tbsp tomato paste

6 cups chicken or beef broth

810 broken lasagna noodles

1 tbsp Italian seasoning

Salt and pepper to taste

2 cups shredded mozzarella cheese

½ cup ricotta cheese

½ cup grated Parmesan cheese

For Garlic Bread Dippers:

1 baguette or Italian loaf

4 tbsp butter, softened

2 cloves garlic, minced

1 tbsp parsley, chopped

2 tbsp Parmesan cheese


Instructions

1. Heat olive oil in a large pot over medium heat. Sauté onion until soft; add garlic and cook briefly.

2. Add ground beef or sausage; cook until browned.

3. Stir in crushed tomatoes, tomato paste, broth, Italian seasoning, salt, and pepper. Simmer 10 minutes.

4. Add broken lasagna noodles; cook 12 minutes until tender.

5. Stir in ricotta, mozzarella, and Parmesan until creamy.

6. Slice baguette into thick strips. Mix butter, garlic, parsley, and Parmesan; spread on bread.

7. Bake at 375°F (190°C) for 8–10 minutes until golden.

8. Serve soup hot with garlic bread dippers for dunking.

Notes

Make it vegetarian by swapping the meat with mushrooms or plant-based crumbles.

Add extra cheeses like provolone or fontina for more melty goodness.

Soup can be refrigerated up to 4 days; reheat with a splash of broth.

Freeze base without noodles and cheese, then add fresh when reheating.
