Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon Calabrian chili paste (adjust to taste)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (14.5 oz) can crushed tomatoes
  • 1/4 cup chicken broth
  • 2 tablespoons chopped fresh basil (optional for garnish)
  • Grated Parmesan cheese (optional for serving)

Instructions

  • Heat olive oil in a large skillet over medium heat.

  • Season chicken breasts with salt and black pepper.

  • Add chicken to the skillet and sear for 3–4 minutes on each side, until golden. Remove and set aside.

  • In the same skillet, add sliced onions and bell peppers. Cook for 4–5 minutes until softened.

  • Stir in garlic, Calabrian chili paste, and oregano. Cook for 1 minute.

  • Pour in crushed tomatoes and chicken broth. Stir to combine.

  • Return chicken to the skillet, cover, and simmer for 20 minutes, until chicken is cooked through.

  • Garnish with fresh basil and grated Parmesan if desired.

  • Serve hot with pasta, rice, or bread.

  • Adjust the level of heat by using more or less Calabrian chili paste.
