Description

This Churu Chicken Amarillo Recipe en Lima is a flavorful and authentic Peruvian dish featuring tender chicken cooked in a vibrant aji amarillo sauce. Easy to make and perfect for any occasion.


Ingredients

  • 4 boneless chicken breasts or thighs
  • 3 tbsp aji amarillo paste
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1 tbsp fresh cilantro, chopped
  • Salt and pepper to taste
  • 1 tbsp lime juice

Instructions

  • Marinate the chicken: Season chicken breasts with salt, pepper, cumin powder, and paprika. Let it marinate for at least 20 minutes.
  • Cook the chicken: In a large pan, heat olive oil over medium heat. Add the chicken and cook until golden brown on both sides (about 6-7 minutes per side). Remove from the pan and set aside.
  • Prepare the sauce: In the same pan, add chopped onions and garlic. Sauté for 3-4 minutes until softened. Stir in the aji amarillo paste, chicken broth, and heavy cream. Let the sauce simmer for 5-7 minutes until slightly thickened.
  • Finish the dish: Return the chicken to the pan and coat it with the sauce. Let it simmer for an additional 5 minutes. Stir in fresh cilantro and lime juice.
  • Serve: Serve hot with rice and your favorite side dishes.

Notes

  • If you can’t find aji amarillo paste, substitute with yellow bell peppers or other chili varieties for a similar flavor.
  • Adjust the level of heat by adding more or less aji amarillo paste.
