Description

This Churu Chicken Amarillo recipe is a flavorful Rajasthani dish made with tender chicken, bold spices, and a rich, aromatic yellow curry. Perfect for any special occasion or family meal!

Ingredients

  • 500 grams of chicken (cut into pieces)
  • 2 tablespoons of yogurt
  • 1 tablespoon of ginger-garlic paste
  • 1 tablespoon of red chili powder
  • 1 tablespoon of turmeric powder
  • 1 tablespoon of cumin powder
  • 1 tablespoon of coriander powder
  • Salt to taste
  • 1 onion (finely chopped)
  • 2 tomatoes (pureed)
  • 2 tablespoons of mustard oil
  • Fresh coriander leaves (for garnish)

Instructions

  • Marinate the Chicken: In a bowl, combine the chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Mix well and set aside to marinate for at least 30 minutes.
  • Prepare the Base: Heat mustard oil in a large pan. Add chopped onions and sauté until golden brown. Add the pureed tomatoes and cook until the mixture thickens and the oil separates.
  • Cook the Chicken: Add the marinated chicken to the pan and stir well. Cook for 10 minutes, allowing the chicken to absorb the flavors. Reduce the heat, cover, and simmer for 15-20 minutes until the chicken is cooked through.
  • Final Touches: Check the consistency of the gravy. Add water if necessary and adjust seasoning. Garnish with fresh coriander leaves.
  • Serve: Serve hot with naan or rice.

Notes

  • You can add vegetables like peas or carrots to the dish for added nutrition.
  • For a creamier texture, add coconut milk or extra yogurt while cooking the chicken.
  • Adjust the spice level by increasing or decreasing the amount of red chili powder and green chilies.
