Description
This Cinnamon Roll Mug Cake is fully vegan, soft, gooey, and bursting with cinnamon flavor—ready in just a few minutes using pantry staples and a microwave.
Ingredients
3 tablespoons all-purpose flour (or gluten-free blend)
1 tablespoon granulated sugar
1/4 teaspoon baking powder
2–3 tablespoons plant-based milk (oat, almond, or soy)
1 tablespoon melted vegan butter or neutral oil
Pinch of salt
1/4 teaspoon vanilla extract (optional)
For cinnamon swirl:
1 tablespoon brown sugar
1/4 teaspoon ground cinnamon
For icing:
2 tablespoons powdered sugar
1/2 teaspoon plant-based milk
Dash of vanilla (optional)
Instructions
1. Lightly grease a microwave-safe mug (8–10 oz).
2. Add flour, sugar, baking powder, and salt to the mug. Stir.
3. Pour in plant-based milk, melted vegan butter, and vanilla. Stir until smooth.
4. In a small bowl, mix brown sugar and cinnamon. Drop small spoonfuls into batter and gently swirl with fork.
5. Microwave on high for 60–80 seconds until top is just set.
6. In a separate bowl, mix powdered sugar with plant milk to make icing.
7. Drizzle icing over warm cake. Serve immediately.

Use oat or soy milk for a richer texture.
