Description
A no-fuss taco soup made with ground beef, beans, corn, and taco seasoning — a classic one-pot weeknight dinner that delivers bold flavor fast.
Ingredients
Ground beef (lean), 1 lb
Onion, diced (optional), 1 small
Black beans, drained & rinsed, 1 can
Corn, drained, 1 can
Diced tomatoes, 1 can
Tomato sauce or crushed tomatoes, 1 can
Taco seasoning, 1 packet or ~2 tbsp
Beef or chicken broth, 1–2 cups
Salt & pepper, to taste
Instructions
1. Heat pot over medium heat. Sauté onion if using.
2. Add ground beef and cook until browned, breaking it up.
3. Drain excess fat.
4. Add diced tomatoes, tomato sauce, and broth.
5. Stir in beans, corn, and taco seasoning. Mix well.
6. Season with salt and pepper.
7. Simmer for 10–15 minutes until flavors blend.
8. Serve hot with toppings like cheese, sour cream, or tortilla chips.
Notes
Swap beef for turkey or plant-based meat.
Use kidney or pinto beans for variation.
Add bell pepper, jalapeños, or zucchini for extra veggies.
Freezes well — just omit toppings before storing.
