Description

Creamy Alfredo Lasagna Soup is a comforting twist on classic lasagna, blending hearty pasta, rich Alfredo sauce, and savory Italian seasonings into a warm, satisfying soup perfect for weeknight dinners or cozy weekends.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 ½ cups heavy cream (or half-and-half)
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 8 lasagna noodles, broken into pieces (or 2 cups short pasta)
  • 1 cup fresh spinach (optional)
  • ½ cup ricotta cheese (optional)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • Salt and black pepper, to taste
  • Pinch of red pepper flakes (optional)

Instructions

  • Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 4–5 minutes.

  • Stir in minced garlic and cook for 1 more minute, being careful not to burn it.

  • Pour in the broth and bring to a gentle simmer.

  • Add heavy cream and stir to combine. Slowly whisk in Parmesan cheese until melted and smooth.

  • Break lasagna noodles into bite-sized pieces and add to the soup. Cook until pasta is al dente, about 10–12 minutes, stirring occasionally.

  • Stir in mozzarella cheese and ricotta (if using), mixing until melted and fully incorporated.

  • Add spinach (if using), Italian seasoning, basil, oregano, and red pepper flakes. Season with salt and pepper to taste.

  • Simmer for another 3–5 minutes until the soup reaches your desired thickness. Adjust with additional broth if needed.

  • Serve hot, garnished with extra Parmesan or fresh herbs if desired.

Notes

  • Use vegetable broth and vegan cheeses to make it vegetarian or vegan.
  • Substitute lasagna noodles with shells, rotini, or gluten-free pasta if preferred.
  • Adjust the spice level with more or less red pepper flakes.
