Ingredients
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 ½ cups heavy cream (or half-and-half)
- ½ cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 8 lasagna noodles, broken into pieces (or 2 cups short pasta)
- 1 cup fresh spinach (optional)
- ½ cup ricotta cheese (optional)
- 1 teaspoon Italian seasoning
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- Salt and black pepper, to taste
- Pinch of red pepper flakes (optional)

Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 4–5 minutes.

Stir in minced garlic and cook for 1 more minute, being careful not to burn it.
