Creamy Chicken & Mushroom One Pot is a simple, rich, and comforting dish made in just one pan. Tender chicken, buttery mushrooms, and a velvety parmesan cream sauce come together perfectly for an easy weeknight dinner that tastes gourmet.
Ingredients
4 boneless skinless chicken thighs or breasts
2 tbsp butter
1 small onion, finely sliced
3 cloves garlic, minced
8 oz mushrooms, sliced
1 cup chicken broth
1 cup heavy cream
1/2 cup grated parmesan
1 tsp dried thyme
Salt & black pepper to taste
Instructions
1. Melt butter in a large deep skillet or pot over medium heat. Season chicken with salt and pepper, then sear on both sides until golden. Remove and set aside.
2. In the same pot, sauté onion, garlic, and mushrooms for 5–6 minutes until soft and golden.
3. Pour in chicken broth and heavy cream, then stir in parmesan and thyme. Mix until smooth.
4. Return chicken to the pot. Reduce heat to low, cover, and simmer for 25–30 minutes until chicken is tender and sauce thickens.
5. Serve hot with rice, mashed potatoes, or pasta. Garnish with fresh parsley or extra parmesan if desired.
Notes
To store: Let cool completely and refrigerate in an airtight container for up to 4 days.
Freeze for up to 2 months and thaw overnight before reheating.
To reheat: Warm gently in a skillet over medium-low heat with a splash of cream or milk to restore smoothness.
Avoid boiling to prevent the sauce from separating.
Serve with mashed potatoes, rice, or roasted vegetables for a complete meal.
