Description
Creamy chicken taco soup with ranch seasoning, black beans, and corn — a cozy and flavorful twist for weeknight dinners.
Ingredients
Chicken breast or thighs, boneless, skinless, 1 lb
Black beans, drained & rinsed, 1 can
Corn, drained, 1 can
Diced tomatoes (with or without chilies), 1 can
Ranch seasoning packet, 1 packet
Cream cheese, softened, 4 oz
Chicken broth / stock, 2–3 cups
Optional: onion & garlic, 1 small onion + 2 cloves garlic
Salt & pepper to taste
Instructions
1. If using, sauté onion and garlic in a pot until soft.
2. Add raw chicken, diced tomatoes, broth, and ranch seasoning.
3. Simmer covered until chicken is cooked (≈15–20 mins stovetop).
4. Remove chicken, shred it, return to the pot.
5. Stir in black beans and corn.
6. Add cream cheese and stir until melted and smooth.
7. Taste and adjust seasoning; serve hot with garnishes.
Notes
Use rotisserie chicken for a shortcut.
Add jalapeños or chipotle for heat.
Substitute Greek yogurt or sour cream if cream cheese isn’t available.
Freeze without the cream cheese and stir it in upon reheating.
