Ingredients
- 8 oz chickpea pasta
- 2 cups fresh spinach, chopped
- 2 tbsp olive oil
- 1 cup heavy cream or dairy-free cream
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- Salt and pepper to taste
- 1 tbsp nutritional yeast (optional for extra flavor)
Instructions
- Cook the chickpea pasta according to package instructions. Drain and set aside.
- In a large pan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add chopped spinach and cook until wilted, about 2-3 minutes.
- Pour in the cream and bring to a simmer, stirring frequently.
- Stir in the rosemary, salt, and pepper. Adjust seasoning to taste.
- Add the cooked chickpea pasta to the pan and toss to coat in the creamy sauce.
- Serve hot and garnish with extra rosemary or nutritional yeast, if desired.
Notes
- You can use dairy-free cream for a vegan version.
- Adjust the creaminess by adding more or less cream based on preference.
