Creamy Cottage Cheese Alfredo

Description

A lightened-up version of Alfredo made with blended cottage cheese. Creamy, high-protein, and delicious with any pasta or veggie base.


Ingredients

1 cup full-fat cottage cheese

½ cup milk (dairy or plant-based)

¼ cup grated parmesan cheese

1 tbsp olive oil

2 cloves garlic, minced

Salt and pepper to taste

¼ cup reserved pasta water

8 oz cooked pasta of choice


Instructions

1. In a blender, combine cottage cheese, milk, and parmesan until smooth.

2. In a pan over low heat, sauté garlic in olive oil until fragrant (about 1 minute).

3. Pour in the blended sauce and heat gently.

4. Add salt and pepper to taste. Stir in reserved pasta water to thin if needed.

5. Toss with freshly cooked pasta until well coated.

6. Serve hot with additional parmesan if desired.

Notes

Use full-fat cottage cheese for the best creamy texture. Do not boil the sauce to prevent curdling. Great with spinach, mushrooms, or grilled chicken.
