Description

These creamy huckleberry cheesecake bars with fresh berry swirl are a rich and indulgent dessert with a smooth, creamy texture and a colorful berry swirl. The perfect balance of sweetness and tartness from the huckleberries makes every bite unforgettable.


Ingredients

1/2 cups graham cracker crumbs

1/2 cup melted butter

16 oz cream cheese (softened)

3/4 cup granulated sugar

2 large eggs

1/4 cup sour cream

1 tsp vanilla extract

1 cup huckleberries (fresh or frozen)

1/4 cup sugar (for berry swirl)


Instructions

Preheat the oven to 325°F (163°C) and line an 8×8-inch baking pan with parchment paper.

Combine the graham cracker crumbs and melted butter and press the mixture into the bottom of the pan.

In a separate bowl, beat cream cheese with sugar until smooth. Add eggs one at a time, mixing after each. Stir in sour cream and vanilla.

Pour the cream cheese mixture over the crust.

For the berry swirl, blend huckleberries and sugar until smooth. Drop spoonfuls of the mixture onto the cheesecake and swirl it with a knife.

Bake for 30-35 minutes, or until the cheesecake is set and the edges are lightly golden. Cool to room temperature and refrigerate for 3 hours or overnight.

Notes

You can substitute blueberries or blackberries for huckleberries if they’re not available.

Let the cheesecake bars cool completely before refrigerating to allow them to set properly.
