Ingredients
2 lbs beef or chicken sausage, sliced
4 potatoes, diced
2 carrots, chopped
2 celery stalks, sliced
1 onion, sliced
3 cloves garlic, minced
3 cups chicken broth
1 cup cream or coconut cream
1 teaspoon thyme
1/2 teaspoon paprika
1/2 teaspoon black pepper
Salt to taste
Instructions
1. Slice the sausage and dice all vegetables into bite-sized pieces.
2. Add the sausage, potatoes, carrots, celery, onion, garlic, thyme, paprika, black pepper, and salt to your slow cooker.
3. Pour in the chicken broth and stir to combine everything evenly.
4. Cover and cook on LOW for 6–7 hours until the vegetables are tender and the potatoes start to break down slightly.
5. In the last 20 minutes of cooking, stir in the cream (or coconut cream) and let it warm through until the broth becomes creamy and thick.
