Description
Creamy white chicken chili with a spicy kick from jalapeños, cayenne, and melty cream cheese. This family-favorite is cozy, bold, and made in one pot.
Ingredients
1 tablespoon olive oil
1 medium onion, diced
3 garlic cloves, minced
2–3 jalapeños, seeded and diced
1 lb cooked chicken, shredded
2 (15 oz) cans white beans, drained and rinsed
4 oz cream cheese, cubed
2 cups chicken broth
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper (optional)
Salt and black pepper, to taste
Shredded cheese, sour cream, or avocado slices for garnish
Instructions
1. In a Dutch oven, heat olive oil over medium heat. Sauté onion, garlic, and jalapeños until fragrant.
2. Add chicken, beans, cumin, cayenne, salt, and pepper. Stir and cook for 2 minutes.
3. Pour in chicken broth and simmer for 15 minutes, stirring occasionally.
4. Reduce heat to low. Add cream cheese cubes and stir until fully melted and creamy.
5. Taste, adjust seasoning, and serve with desired toppings.
Notes
Remove jalapeño seeds to tone down spice for kids.
For extra heat, leave some seeds or increase cayenne.
This recipe works well with rotisserie chicken or leftover roasted chicken.
