These crispy garlic butter parmesan potatoes are golden-brown, packed with flavor, and easy to make. They’re the perfect side dish for any meal!
Ingredients
- 1.5 lbs baby potatoes, halved
- 3 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 4 cloves garlic, minced
- ½ cup grated parmesan cheese
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 1 tsp dried oregano
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare Potatoes: Wash and halve the baby potatoes. Pat them dry to remove excess moisture.
- Make Garlic Butter Mixture: In a bowl, mix melted butter, olive oil, minced garlic, parmesan cheese, salt, pepper, paprika, and oregano.
- Coat Potatoes: Toss the potatoes in the garlic butter mixture, ensuring they are evenly coated.
- Arrange on Baking Sheet: Place potatoes cut-side down on the baking sheet for a crispier finish.
- Roast: Bake for 35-40 minutes, flipping halfway, until golden brown and crispy.
- Garnish & Serve: Sprinkle fresh parsley on top and serve warm with your favorite dip.
Notes
- For extra crispiness, soak potatoes in cold water for 20 minutes before roasting.
- To make them in an air fryer, cook at 375°F (190°C) for 15-18 minutes, shaking halfway.
- Store leftovers in an airtight container for up to 4 days and reheat in the oven or air fryer.
