Ingredients

  • 1.5 to 2 lbs boneless, skinless chicken breasts (or thighs)
  • 4 cups chicken broth (low-sodium preferred)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced (optional)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 1½ cups freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves, for garnish

Instructions

  • Season chicken breasts with salt, pepper, and Italian seasoning.

  • Place seasoned chicken in the bottom of the crock pot.

  • Add chopped onions, minced garlic, and sliced mushrooms on top.

  • Pour in chicken broth until the chicken is covered.

  • Cook on Low for 6–8 hours or High for 3–4 hours, until chicken is tender and cooked through.

  • About 30 minutes before serving, stir in the heavy cream and shredded mozzarella cheese.

  • Shred the chicken using two forks and return it to the soup.

  • Adjust salt and pepper to taste.

  • Garnish with fresh basil leaves and serve hot.

  • You can add carrots or celery during the prep phase for extra vegetables.
  • For a thicker soup, use less broth or add a cornstarch slurry at the end.
