Description

This cozy crockpot apple cider pot roast features tender beef, golden potatoes, and a savory-sweet gravy made with apple cider. The perfect fall dinner!


Ingredients

34 lbs beef chuck roast

1 large onion, sliced

45 small potatoes, halved

2 cups apple cider

1 cup beef broth

2 tbsp brown sugar

2 tbsp soy sauce

1 tbsp Dijon mustard

1 tsp salt

1/2 tsp black pepper

3 sprigs fresh thyme

2 tbsp butter (optional, for finishing)


Instructions

1. Place the onions and potatoes in the bottom of your crockpot.

2. Set the roast on top of the vegetables.

3. Whisk together apple cider, broth, brown sugar, soy sauce, mustard, salt, and pepper.

4. Pour the mixture over the roast. Add fresh thyme on top.

5. Cover and cook on LOW for 8–9 hours or HIGH for 5–6, until fork-tender.

6. Optional: Stir in butter just before serving for extra richness.

7. Serve the roast with potatoes and drizzle with the cider gravy.

Notes

Use hard cider for an adult twist.

Add carrots or parsnips for more variety.

To thicken the sauce, stir in cornstarch slurry at the end.
