Description

Crockpot Chicken and Dumplings is a creamy, comforting slow cooker meal made with tender chicken, fluffy biscuit dumplings, and a rich savory broth  the perfect cozy dinner for any night of the week.


Ingredients

2 lb boneless, skinless chicken breasts or thighs

4 cups chicken broth

2 cans (10.5 oz each) cream of chicken soup

4 tbsp salted butter

1 tsp garlic powder

1 tsp dried thyme or Italian seasoning

Salt and pepper to taste

1 can (16 oz) refrigerated biscuit dough, cut into small pieces

1 cup mixed vegetables (carrots, peas, celery) optional

2 tbsp chopped fresh parsley for garnish


Instructions

1. Place chicken in the bottom of the crockpot and season with garlic powder, thyme, salt, and pepper.

2. Pour in chicken broth and cream of chicken soup, then add butter on top.

3. Add optional vegetables like carrots or celery if using.

4. Cover and cook on LOW for 6 hours or HIGH for 3 hours until the chicken is tender.

5. Shred the chicken in the crockpot using two forks, then stir to combine.

6. Add biscuit dough pieces evenly across the top of the mixture.

7. Cover again and cook on HIGH for 45–60 minutes until the dumplings are fluffy and cooked through.

8. Remove the lid and cook uncovered for 10–15 minutes to thicken the broth if desired.

9. Garnish with fresh parsley before serving.

Notes

You can use frozen chicken, but increase cook time by 1–2 hours.

For thicker broth, uncover for the last 15 minutes or add a tablespoon of flour whisked with milk.

Add corn, peas, or potatoes for a heartier meal.

Refrigerate leftovers up to 3 days or freeze the chicken mixture (without dumplings) for later.
