Juicy chicken slow-cooked in a tomato, pepper, and mushroom sauce. This Crockpot Chicken Cacciatore is hearty, flavorful, and perfect for an easy weeknight dinner.
Ingredients
2 lbs chicken breasts or thighs
1 can (28 oz) crushed tomatoes
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
3 cloves garlic, minced
1 cup chicken broth
1 cup sliced mushrooms
1 tsp Italian seasoning
1 tsp black pepper
1/2 tsp salt
1/2 tsp paprika
Fresh parsley, chopped (for garnish)
Instructions
1. Place the chicken directly into the crockpot.
2. Scatter the sliced red and green bell peppers, onion, garlic, and mushrooms evenly over the chicken.
3. Pour in the crushed tomatoes and chicken broth.
4. Sprinkle Italian seasoning, black pepper, salt, and paprika over the top, then stir gently to combine.
5. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours until the chicken is tender and sauce has thickened.
6. Stir gently, garnish with fresh parsley, and serve over pasta, rice, or potatoes.
Notes
For richer flavor, use chicken thighs instead of breasts.
If you prefer a thicker sauce, remove the lid during the last 30 minutes of cooking.
Add a splash of red wine for deeper Italian flavor.
Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
