Description
Crockpot Chicken Lo Mein is an easy weeknight dinner with tender chicken, vegetables, and lo mein noodles tossed in a savory-sweet sauce — all made in your slow cooker.
Ingredients
2 chicken breasts, sliced thin
2 cups broccoli florets
1 red bell pepper, sliced
1 cup shredded carrots
3 green onions, sliced
3 cloves garlic, minced
½ cup low sodium soy sauce
⅓ cup honey
2 Tbsp sesame oil
1 Tbsp cornstarch mixed with 2 Tbsp water
8 oz lo mein noodles, cooked
Instructions
1. Add sliced chicken, broccoli, bell pepper, carrots, green onions, and garlic to the crockpot.
2. Pour in soy sauce, honey, and sesame oil. Stir gently to mix.
3. Cover and cook on LOW for 4–5 hours until chicken is tender.
4. Mix the cornstarch with water, then stir it into the crockpot. Let cook 10–15 minutes to thicken.
5. Cook noodles according to package directions and drain.
6. Add noodles to the crockpot and toss everything together until coated.
7. Serve warm and garnish with green onions or sesame seeds.
Notes
Swap lo mein for spaghetti or ramen noodles if needed.
Add red pepper flakes or sriracha for heat.
Prep ahead and freeze ingredients (except noodles and slurry) for quick dump-and-go meals.
