Ingredients

2.53 lb beef chuck roast

1 cup beef broth

1/3 cup balsamic vinegar

1/4 cup honey

4 cloves garlic, minced

1 medium onion, sliced

1 tbsp tomato paste

1 tsp dried thyme

1 tsp dried rosemary

Salt & black pepper to taste

Optional: carrots and baby potatoes for a full meal


Instructions

1. Pat the beef chuck roast dry with paper towels and season all sides with salt and black pepper.

2. In a bowl, whisk together beef broth, balsamic vinegar, honey, garlic, tomato paste, thyme, and rosemary.

3. Place sliced onions at the bottom of the crockpot. Set the beef roast on top.

4. Pour the balsamic-honey sauce evenly over the roast to coat.

5. Add carrots and baby potatoes around the beef if using.

6. Cover and cook on LOW for 8–9 hours or on HIGH for 4–5 hours until the beef is tender and falls apart.

7. Shred the beef gently and mix it with the sauce before serving.

8. Serve hot with vegetables and drizzle extra sauce on top.

Notes

To store: Allow leftovers to cool completely, then refrigerate in airtight containers for up to 4 days or freeze for up to 3 months.

To reheat: Warm gently on the stovetop over medium-low heat or in the microwave, adding a splash of broth if needed.

For a thicker sauce: Whisk 1 tbsp cornstarch with 2 tbsp cold water and stir into the sauce, then cook for 10–15 minutes on HIGH until slightly thickened.

Serve over mashed potatoes, rice, or buttered noodles for a complete meal.
