Description
This Crockpot Lasagna Soup is the ultimate dump-and-go comfort food. Loaded with rich tomato flavor, tender pasta, and creamy cheese swirls, itβs everything you love about lasagna with none of the work.
Ingredients
1 pound ground beef or Italian sausage
1 medium onion, chopped
3 cloves garlic, minced
1 can (28 oz) crushed tomatoes
1 can (6 oz) tomato paste
4 cups beef or chicken broth
1 teaspoon Italian seasoning
1/2 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes (optional)
8 oz uncooked lasagna noodles, broken into pieces
Salt and pepper to taste
1 cup shredded mozzarella
1/2 cup ricotta cheese
Fresh basil or parsley for garnish
Instructions
1. Add ground meat, onion, garlic, crushed tomatoes, tomato paste, broth, and seasonings to the crockpot.
2. Stir to combine, then add uncooked noodles.
3. Cover and cook on low for 6β8 hours or high for 3β4 hours.
4. Before serving, stir soup and taste for seasoning.
5. Ladle into bowls and top with mozzarella and a dollop of ricotta.
6. Garnish with fresh basil or parsley and serve hot.
Notes
If using raw ground meat, you can brown it first for added flavor or add it directly for ease.
For a vegetarian version, use meatless crumbles or lentils and vegetable broth.
Add more broth before serving if soup thickens too much.
