Description
This Crockpot Lasagna Soup is the ultimate weeknight comfort food. Made with hearty beef, rich tomato sauce, and tender pasta—just dump it in the slow cooker and come home to a cheesy, cozy meal.
Ingredients
1 lb ground beef or sausage
1 small onion, diced
2–4 cloves garlic, minced
28 oz crushed tomatoes
15 oz diced tomatoes
24 oz marinara sauce
4–6 cups beef broth
8–10 lasagna noodles, broken
1/2 cup ricotta cheese
1 cup shredded mozzarella
1/2 cup grated Parmesan
1 tsp Italian seasoning
Salt and pepper to taste
Instructions
1. Brown the ground beef with onion and garlic in a skillet. Drain fat.
2. Transfer to slow cooker with crushed tomatoes, diced tomatoes, sauce, broth, and seasoning.
3. Cover and cook on low for 6–8 hours or high for 3–4 hours.
4. Add broken noodles for the last 30–45 minutes until tender.
5. Stir in cheeses and serve warm.
6. Top with extra cheese or herbs as desired.
Notes
Add fresh spinach or zucchini in the last hour for more veggies.
For gluten-free, use gluten-free lasagna noodles.
Freeze the soup base without noodles and add fresh ones when reheating.
