Crockpot Maple Dijon Beef Chuck is a tender, slow-cooked beef roast simmered in a rich maple Dijon sauce with garlic, herbs, and a touch of soy. The result is sweet, tangy, and full of cozy flavor, perfect for weeknights or family dinners.
Ingredients
2 lbs beef chuck roast
1/3 cup pure maple syrup
1/4 cup Dijon mustard
1 tablespoon soy sauce
1 tablespoon minced garlic
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 cup beef broth
Salt and pepper to taste
Instructions
1. Place the beef chuck roast in your crockpot and season both sides with salt and pepper.
2. In a small bowl, whisk together maple syrup, Dijon mustard, soy sauce, garlic, thyme, rosemary, and beef broth.
3. Pour the sauce over the beef, making sure it’s well coated.
4. Cover and cook on LOW for 7 to 8 hours, or until the beef is fork-tender.
5. Remove the beef and let it rest for a few minutes before slicing or shredding.
6. Serve with the thickened maple Dijon sauce spooned over top.
Notes
For a thicker sauce, remove the lid during the last 30 minutes of cooking or stir in a small cornstarch slurry.
Leftovers taste even better the next day and can be stored in the refrigerator for up to 4 days.
Freeze for up to 2 months, then thaw overnight and reheat gently on the stove.
Serve over mashed potatoes, rice, or use as sandwich filling for a simple comfort meal.
