Description

This Crockpot Mediterranean Chicken Stew with Artichokes, Beans & Olives is a warm, flavorful slow-cooked meal packed with tender chicken, creamy white beans, tangy artichokes, and briny olives. Ingredients

2 boneless, skinless chicken breasts (or thighs)

1 can (15 oz) white beans, drained and rinsed

1 can (14 oz) diced tomatoes

1 cup artichoke hearts, quartered (canned or frozen, drained)

½ cup pitted Kalamata olives, halved

1 small onion, diced

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon thyme

½ teaspoon paprika

1 tablespoon olive oil

1 cup chicken broth

Salt & pepper to taste

Juice of ½ lemon

Fresh parsley for garnish


Instructions

1. Add chicken, beans, tomatoes, artichokes, olives, onion, garlic, olive oil, herbs, paprika, and chicken broth to your crockpot. Stir to combine.

2. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and flavors have melded together.

3. Remove chicken, shred it with two forks, and return it to the stew.

4. Stir in lemon juice before serving to brighten the flavors.

5. Top with chopped parsley and an extra drizzle of olive oil for a rustic Mediterranean finish.

Notes

Use chicken thighs for richer flavor, or chicken breasts for a leaner stew.

Add a pinch of red pepper flakes if you enjoy a bit of heat.

For a thicker stew, uncover for the last 30 minutes to let the sauce reduce.

Leftovers freeze beautifully for up to 2 months—just reheat gently with a splash of broth.
