Description
Crockpot sausages with potatoes and peppers is a one-pot comfort meal made with chicken sausages, bell peppers, and baby potatoes in a savory tomato broth.
Ingredients
1½ lbs chicken sausages (uncooked or lightly browned first)
1 lb baby potatoes, halved
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
3 tbsp olive oil
2 tbsp tomato paste
1 tsp garlic powder
1 tsp oregano
½ cup vegetable or chicken broth
Salt & pepper to taste
Fresh thyme for garnish
Instructions
1. (Optional) Brown sausages in a skillet for 5 minutes for extra color and flavor.
2. Add all ingredients to the crockpot including sausages, vegetables, oil, tomato paste, and seasonings.
3. Pour in broth and mix gently to coat.
4. Cover and cook on LOW for 6 hours or HIGH for 3–4 hours until sausages are cooked through and potatoes are tender.
5. Stir gently before serving and garnish with fresh thyme.
Notes
Browning the sausages beforehand adds great depth and a golden color.
This dish pairs perfectly with crusty bread or a light salad.
Use any sausage variety like turkey or plant-based.
