Ingredients
- 1 cup Medjool dates (pitted, about 10–12 dates)
- 1/2 cup almonds or walnuts
- 2 tablespoons chia seeds
- 2 tablespoons cocoa powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Optional: shredded coconut for coating
Instructions
- Prepare the Dates: Soak the pitted dates in warm water for 10 minutes if they feel dry. Drain and set aside.
- Blend the Base: In a food processor, combine the dates, almonds or walnuts, and chia seeds. Blend until the mixture forms a coarse, sticky dough.
- Add Flavor: Add the cocoa powder, vanilla extract, and salt. Blend again until well incorporated.
- Shape the Bites: Scoop out small portions of the mixture and roll them into bite-sized balls. Lightly oil your hands or refrigerate the mixture if it’s too sticky.
- Optional Toppings: Roll each ball in shredded coconut for extra flavor and decoration.
- Chill and Serve: Place the bites on a tray and refrigerate for 20 minutes to firm up. Store in an airtight container for up to a week.
