Description
A creamy, easy one-dish Dump & Go Garlic Parmesan Chicken and Potatoes, perfect for busy weeknights.
Ingredients
2 lbs chicken breasts or thighs, cubed
1½ lbs red or Yukon potatoes, cubed
2–3 tbsp olive oil
4 cloves garlic, minced
1 cup creamy garlic Parmesan sauce (or BWW version)
1 cup shredded mozzarella
½ cup grated Parmesan
1 tsp paprika
1 tsp Italian seasoning
Salt & pepper to taste
Fresh parsley, chopped
Instructions
1. Preheat oven to 400°F. Toss potatoes with oil, half the garlic, paprika, salt & pepper; spread on sheet pan. Roast 15 min.
2. Meanwhile, toss chicken with oil, remaining garlic, Italian seasoning, salt & pepper.
3. When potatoes start to soften, add chicken on pan, drizzle garlic Parmesan sauce, bake additional 20 min.
4. Sprinkle mozzarella & grated Parmesan, broil 2–3 min until cheese melts.
5. Garnish with parsley and serve.
Notes
You can prep ingredients ahead and store in the fridge overnight.
For slow cooker: layer seasoned potatoes and chicken, pour sauce, cook on low 6 hrs or high 4 hrs, top with cheese last 20 min.
Red or Yukon potatoes hold shape best and absorb flavors well.
