Only 5 ingredients needed for this flavorful Italian chicken and potatoes dinner. Roasted in the oven for a crispy, juicy, no-fuss weeknight meal.
Ingredients
4 boneless, skinless chicken breasts
1½ lbs Yukon gold or baby red potatoes, quartered
2 tbsp olive oil
1½ tbsp Italian seasoning
Salt and pepper to taste
Instructions
1. Preheat oven to 425°F (220°C).
2. Toss potatoes with 1 tbsp olive oil, half the Italian seasoning, salt, and pepper. Spread on baking sheet.
3. Coat chicken with remaining oil, seasoning, and salt/pepper.
4. Arrange chicken among potatoes.
5. Roast 25–30 minutes, flipping potatoes halfway. Ensure chicken reaches 165°F.
6. Serve hot with optional lemon juice or Parmesan on top.
Notes
Add sliced zucchini or cherry tomatoes in the final 10 minutes.
Squeeze lemon juice before serving to brighten the flavor.
Refrigerate leftovers in an airtight container for up to 3 days.
