Description
Juicy chicken thighs seared golden and smothered in a creamy garlic mushroom sauce. Rich, hearty, and perfect for a comforting dinner.
Ingredients
6 bone-in, skin-on chicken thighs
2 tbsp olive oil
2 tbsp butter
4 garlic cloves, minced
250 g (8 oz) mushrooms, sliced
1 cup (240 ml) heavy cream
½ cup (120 ml) chicken broth
1 tsp dried thyme or Italian seasoning
Salt and freshly ground black pepper, to taste
Optional garnish: chopped parsley or grated Parmesan
Instructions
1. Pat chicken thighs dry and season with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear thighs skin-side down for 6–7 minutes until golden, then flip for 5 minutes. Transfer to plate.
3. Lower heat to medium. Add butter, then garlic. Cook 30 seconds.
4. Add mushrooms and sauté 5 minutes until golden.
5. Pour in chicken broth, scraping browned bits. Stir in cream and thyme, simmer 3 minutes.
6. Return chicken to pan, skin-side up. Spoon sauce over, cover, and simmer 10 minutes until chicken reaches 74 °C (165 °F).
7. Remove from heat, garnish with parsley or Parmesan, and serve.
Notes
For deeper flavor, swap half the broth for dry white wine.
Stir in Parmesan at the end for a cheesier, thicker sauce.
Serve over pasta, rice, or bread to soak up the sauce.
