Description
Soft sugar cookie crust topped with creamy tangy frosting and fresh colorful fruits. A perfect summer dessert for parties or picnics.
Ingredients
1 ½ cups all-purpose flour
1 ½ tsp cornstarch
1 tsp baking powder
¼ tsp salt
½ cup unsalted butter, softened
¾ cup granulated sugar
1 large egg
1 tsp pure vanilla extract
8 oz full-fat brick cream cheese, softened
3 tbsp unsalted butter, softened
1 ¼ cups confectioners’ sugar
1 tsp pure vanilla extract
3 cups assorted sliced fresh fruits
Instructions
1. Whisk together flour, cornstarch, baking powder, and salt.
2. Beat butter and sugar until creamy. Add egg and vanilla.
3. Combine wet and dry ingredients. Chill dough 20 minutes.
4. Press dough onto greased 12-inch pizza pan into 9-10 inch circle.
5. Bake at 350°F for 17-19 minutes until edges are lightly browned. Cool completely.
6. Beat cream cheese and butter until smooth. Add confectioners’ sugar and vanilla.
7. Spread frosting on cooled crust.
8. Top with sliced fresh fruits. Chill 30 minutes before serving.
Notes
Use lemon juice on fruits like apples and bananas to prevent browning.
You can make crust and frosting ahead; assemble with fruit on the day of serving.
