Description
A gentle, umami-rich Japanese clear soup filled with tender dumplings and greens. Perfectly light and comforting for any day.
Ingredients
4–6 cups dashi stock or clear broth
1 cup flour dumpling dough (flour + water)
1 cup chopped carrots or root vegetables
1–2 cups spinach or kale, chopped
Soy sauce or salt, to taste
Instructions
1. Bring the broth to a simmer in a large pot.
2. Add chopped root vegetables and simmer until just tender.
3. For suiton dumplings, spoon small lumps of dough directly into the broth.
4. For gyoza, parboil frozen dumplings separately until they float, then transfer them to the soup.
5. Stir in greens until wilted.
6. Season with soy sauce or salt to taste.
7. Serve hot and enjoy immediately.
Notes
Use vegetable broth or kombu dashi to make it vegan.
Parboiling dumplings keeps the broth clear and clean.
Store leftovers up to 2 days; dumplings may soften further on reheating.
