Easy Patty Pan Squash Patties

Description

These patty pan squash patties are crispy, nutritious, and perfect for quick weeknight meals.


Ingredients

2 cups grated patty pan squash

1 egg

½ cup breadcrumbs (or almond flour)

1 clove garlic, minced

¼ cup grated parmesan or cheddar

½ tsp salt

¼ tsp black pepper

1 tbsp chopped parsley or basil

1 tbsp olive oil (for frying)


Instructions

1. Grate patty pan squash and squeeze out excess moisture using a kitchen towel.

2. In a large bowl, combine squash, egg, breadcrumbs, garlic, cheese, herbs, salt, and pepper.

3. Mix until well combined. Chill the mixture for 10 minutes.

4. Form into 8 small patties.

5. Heat oil in a nonstick skillet over medium heat.

6. Fry patties for 3–4 minutes per side until golden brown.

7. Alternatively, bake at 400°F for 20 minutes, flipping halfway.

8. Serve hot with yogurt or dipping sauce.

Notes

Chilling the mix helps patties hold shape.

Make ahead and freeze raw patties for later.

Add grated onion or spice blend for extra flavor.
