Description
Weeknight crockpot beef stew made easy with tender beef, carrots, celery, and hearty potatoes — all simmered in a savory broth for a no-fuss comfort meal.
Ingredients
2 to 2.5 lbs beef chuck, cubed
Salt and pepper, to taste
3 tablespoons all-purpose flour
1 large onion, chopped
3 cloves garlic, minced
3 carrots, sliced
3 potatoes, diced
2 ribs celery, chopped
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried parsley
4 cups beef broth
Fresh parsley for garnish
Instructions
1. Season beef with salt and pepper, then toss with flour.
2. (Optional) Brown beef in batches; set aside.
3. Place beef, onion, garlic, carrots, potatoes, and celery in crockpot.
4. Stir in tomato paste, Worcestershire sauce, thyme, and parsley.
5. Pour in beef broth to cover contents.
6. Cook on LOW for 7–8 hours or HIGH for 4–5 hours.
7. (Optional) Thicken with mashed potatoes or a slurry.
8. Adjust seasoning and garnish with fresh parsley before serving.
Notes
Skip browning step if short on time.
Mash some potatoes to naturally thicken broth.
Great with crusty bread or a side salad.
Store leftovers 3–4 days or freeze up to 3 months.
