Description

A refreshing and healthy fattoush salad with pita chips featuring vibrant vegetables, fresh herbs, and a tangy dressing, perfect for Iftar during Ramadan.


Ingredients

  • 2 cups chopped lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 23 pita bread, cut into strips and toasted
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp vinegar
  • 1 tsp sumac
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine lettuce, tomatoes, cucumber, red onion, parsley, and mint.
  • In a small bowl, whisk together olive oil, lemon juice, vinegar, sumac, salt, and pepper.
  • Pour the dressing over the vegetables and toss to combine.
  • Gently add the toasted pita chips just before serving to retain their crunch.
