Description
A refreshing and healthy fattoush salad with pita chips featuring vibrant vegetables, fresh herbs, and a tangy dressing, perfect for Iftar during Ramadan.
Ingredients
- 2 cups chopped lettuce
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 2–3 pita bread, cut into strips and toasted
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tbsp vinegar
- 1 tsp sumac
- Salt and pepper to taste
Instructions
- In a large bowl, combine lettuce, tomatoes, cucumber, red onion, parsley, and mint.
- In a small bowl, whisk together olive oil, lemon juice, vinegar, sumac, salt, and pepper.
- Pour the dressing over the vegetables and toss to combine.
- Gently add the toasted pita chips just before serving to retain their crunch.
- Serve immediately and enjoy a healthy and refreshing meal.
Notes
- For a gluten-free version, substitute pita chips with gluten-free crackers.
- You can prepare the salad in advance, but add the pita chips right before serving to prevent them from becoming soggy.
- Store leftover salad (without pita chips) in an airtight container for up to 2 days.
