This French Onion Chicken and Rice recipe is an easy, flavorful dish that’s perfect for family dinners or meal prep. With creamy chicken and savory rice, it’s a comforting and satisfying meal.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 1 can French onion soup
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup water
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium-high heat. Season chicken breasts with garlic powder, onion powder, salt, and pepper. Cook the chicken until browned on both sides (about 5 minutes per side).
- Remove chicken from skillet and set aside. In the same skillet, add the French onion soup and water. Stir well.
- Add the rice to the skillet and bring to a simmer. Place the chicken on top of the rice. Cover and bake in the oven for 25 minutes.
- Remove from the oven and sprinkle mozzarella cheese on top of the chicken. Bake for an additional 5 minutes until the cheese is melted.
- Garnish with fresh parsley and serve.
Notes
- You can use brown rice for a healthier option, but be sure to adjust the cooking time.
- For added flavor, try adding sautéed mushrooms to the rice mixture before baking.
