Description

Gorditas De Nata are traditional Mexican pastries made with a soft, sweet dough and filled with rich nata cream. These classic treats are perfect for breakfast, dessert, or an afternoon snack. Simple ingredients and authentic flavors make them a beloved staple in Mexican households.


Ingredients

For the Dough:

  • 2 cups warm milk
  • 1 tablespoon granulated sugar
  • 1 teaspoon active dry yeast
  • 3 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup melted butter

For the Nata Filling:

  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  • In a large mixing bowl, combine warm milk, sugar, and yeast. Let sit for 5 minutes until frothy.
  • Add flour, salt, and melted butter. Mix until a smooth dough forms.

  • Knead the dough for about 10 minutes until elastic.

  • Cover and let rest in a warm place for 1 hour or until doubled in size.

  • Meanwhile, whip heavy cream, sugar, and vanilla in a chilled bowl until stiff peaks form. Set aside.

  • Punch down the dough and divide into golf ball-sized portions.

  • Flatten each dough ball into a disk. Add 1 spoonful of nata filling to the center. Fold and seal edges well.

  • Heat a skillet or griddle over medium heat. Cook each gordita for 4–5 minutes per side, until golden brown.

  • Alternatively, bake at 375°F (190°C) for 15–20 minutes until golden.

  • Serve warm and enjoy.

Notes

  • Chill the bowl and whisk before whipping cream for better volume.
  • Don’t over-whip cream to avoid curdling into butter.
  • For variations, use fruit jam, dulce de leche, or chocolate as alternative fillings.
  • Store leftovers in an airtight container for up to 2 days.
