Ingredients
For the Dough:
- 2 cups warm milk
- 1 tablespoon granulated sugar
- 1 teaspoon active dry yeast
- 3 cups all-purpose flour
- 1/4 teaspoon salt
- 1/4 cup melted butter
For the Nata Filling:
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
- In a large mixing bowl, combine warm milk, sugar, and yeast. Let sit for 5 minutes until frothy.

Add flour, salt, and melted butter. Mix until a smooth dough forms.

Knead the dough for about 10 minutes until elastic.

Cover and let rest in a warm place for 1 hour or until doubled in size.

Meanwhile, whip heavy cream, sugar, and vanilla in a chilled bowl until stiff peaks form. Set aside.

Punch down the dough and divide into golf ball-sized portions.

Flatten each dough ball into a disk. Add 1 spoonful of nata filling to the center. Fold and seal edges well.

Heat a skillet or griddle over medium heat. Cook each gordita for 4–5 minutes per side, until golden brown.

Alternatively, bake at 375°F (190°C) for 15–20 minutes until golden.

Notes
- Chill the bowl and whisk before whipping cream for better volume.
- Don’t over-whip cream to avoid curdling into butter.
