Ingredients

- ¼ tsp salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 tbsp lemon zest
- ¼ cup freshly squeezed lemon juice
- ½ cup whole milk
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin or line with cupcake liners.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In a separate bowl, cream butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then mix in lemon zest, lemon juice, and vanilla extract.
- Gradually add the dry ingredients, alternating with milk, beginning and ending with the flour mixture.
- Divide the batter evenly into the prepared muffin tin.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk together powdered sugar and lemon juice until smooth.
- Drizzle the glaze over the cooled cakes and garnish with lemon zest, if desired.
