Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tbsp lemon zest
  • ¼ cup freshly squeezed lemon juice
  • ½ cup whole milk
  • 1 tsp vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C) and grease a muffin tin or line with cupcake liners.
  • In a bowl, whisk together flour, baking powder, and salt. Set aside.
  • In a separate bowl, cream butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, then mix in lemon zest, lemon juice, and vanilla extract.
  • Gradually add the dry ingredients, alternating with milk, beginning and ending with the flour mixture.
  • Divide the batter evenly into the prepared muffin tin.
  • Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  • For the glaze, whisk together powdered sugar and lemon juice until smooth.
  • Drizzle the glaze over the cooled cakes and garnish with lemon zest, if desired.
